1. I brown a pound of ground turkey in a frying pan, the leanest you can find. 
  2. Add one normal sized can of stewed diced tomatoes (Trader Joes or wherever) including juice to the frying pan, any kind of tomatoes that don’t have any salt or any thing added except spices. 
  3. Mix with cooked turkey well and add curry powder to taste, like 2 or 3 teaspoons and let simmer for 5 minutes. Also add salt to taste. 
  4. While it is simmering, weigh out your cauliflower rice on a plate and microwave for 3-4 minutes. I usually weigh out 2 portions of cauliflower rice, and the tomatoes count as 1 green 🙂
  5. Put the plate with cauliflower rice on the scale and zero out and add your turkey tomato mixture on top until it weighs the right amount, 6 or 7oz depending on fat content of the turkey.
  6. Mix all together on your plate and enjoy! Don’t forget your healthy fats too! 
  7. This should make enough for 2-3 meals, I make this on the weekend and measure into deli containers so I have the right amounts and pop it in the microwave when you are ready to eat! Winner winner turkey dinner!
